What Is “Mi Xao”?

In Vietnamese, “Mi” means “noodles”, and “Xao” refers to stir-frying. As the name implies, “Mi Xao” is a recipe that requires you to stir-fry noodles with other ingredients.

This cuisine is very popular in Vietnam and Asian countries because of its simplicity. You can add every ingredient you like to the noodles to achieve a flavorful dish.

Seafood is a nice choice for the recipe. It turns the noodles into a protein-rich cuisine, giving you a nutritional meal.

Mi Xao Lobster Recipe: Step-by-Step Instructions

The primary ingredients for this recipe are noodles and lobsters. Regarding vegetables, we use green onions, onions, and bell peppers. But you can choose your favorites, such as cabbage or spinach.

Step 1: Prepare the Lobsters

First, scrub the stains of the lobster shells using a brush under the tap running water.

Next, cut the tails of the lobsters into pieces at each joint. Each piece should be about one inch long.

Halve each lobster head lengthwise and cut them into bite-sized pieces. Then, cut off the prawns and lightly break the shell.

Now, put all the lobster parts you have cut in a bowl. Add two eggs and mix them well. It would be best to use the whites of the eggs only.

Add cornstarch and stir until the powder forms a thin layer over the lobster shell.

Pour cooking oil into a pan and put it on the stove. Once the oil bubbles, add the lobsters and fry them on high heat for about three minutes.

Turn the lobsters over and fry for another two minutes to ensure that all the parts of the three lobsters cook evenly.

After that, take the lobsters out and drain the oil. Then, set it aside.

Step 2: Stir-Fry the Noodles

Cook noodles in boiling water until the noodles turn soft and smooth. The time needed for this step depends on which type of noodles you use.

After cooking, take the noodles out and rinse them with cold water, then drain.

Wash green onions, onions, and bell peppers. Then, chop them into slices.

Put a pan on the stove. Add two tablespoons of cooking oil and ½ of the chopped vegetables and stir-fry for one minute.

Next, add the noodles and stir for one minute on medium heat, then add beef sauce and stir-fry for another 3 minutes. After that, turn off the heat and place the noodles on a plate.

Add two tablespoons of cooking oil and the remaining vegetables to the pan and sauté for one minute.

Add the lobsters you have prepared to the pan. The lobsters also need XO sauce and beef sauce.

After putting all the necessary ingredients and seasonings, stir-fry over low heat for three minutes. The lobsters require some time to absorb all the seasonings.

Turn off the heat, add green onions and chili to the lobster span, and stir well. Then, set the lobsters on the plate of noodles. Your dish is ready to enjoy now.
