Mexican Caesar Salad

Equipment

  • 1 oven (for baking bread)

Ingredients

  • 1 pc egg yolk
  • Baguette bread
  • 1 cup oil for toast
  • 1 box anchovies
  • 1 cup olive oil
  • ½ cup fresh lime juice
  • Worcestershire sauce
  • Mustard Dijon
  • Garlic, pepper, salt
  • ¾ cup Parmigiano Reggiano
  • 2 heads romaine lettuce
  • Herbs (optional)

Instructions

For the Croutons

  • Bake the bread in the oven until evenly browned and lightly golden.
  • For extra flavor, spread garlic and heated olive oil over the cake.

For the Dressing

  • Place fish, eggs and spices, olive oil in a blender and blend until smooth.
  • Next, adjust the seasoning to taste.

For the Salad

  • Clean the romaine lettuce and coriander, then place them in a large mixing bowl.
  • Add cheese and sauce and top with toast and garnish.
